Interesting question. Very roughly, I think I think of dragonborn as just a way to show that that the world is ancient and weird. Like, yo, these guys were around and took their shot well before humans, and now they’re just folk. Unfortunately, that’s also sort of what tieflings are, except that I feel like they’re a bit more recent, and more of a sign of how it’s really hard to get what the dragonborn had, so hard that it worth doing just about the worst thing you can imagine – and you can still fail. Especially if part of your goal means having to go up against even a faded dragonborn empire.
